COFFEE IN NICARAGUA:
Nicaragua is a classic among coffee producing countries worldwide. The first large ones began to be introduced in 1790 by Catholic missionaries, and to this day it is one of the country's main exports. Nicaragua has everything to develop its coffee industry: fertile lands of volcanic origin, abundant biomass and water..., a lot of water, especially in the northern mountains, where our coffee comes from. It also has an important agricultural workforce, something that is scarce in other surrounding producing countries.
It is estimated that coffee employs more than 350,000 people, and that there are more than 40,000 producers, most of them small, many of them focused on the production of high-quality Arabica varieties, not only by using more qualitative varieties, but also at the level of positioning in international markets, since there are many coffees with organic or fair trade certifications, which contribute to multiplying their value in the market.
“EYE OF THE WATER” FARM
To reach our rate of excellence we must visit the department of Nueva Segovia, in northern Nicaragua. It is a mountainous territory that acts as a natural border with the neighboring country, the Republic of Honduras. This area is, without a doubt, one of the most important in the country in terms of coffee, and its capital, Ocotal, gives its name to one of the most striking coffees in the world. Mozonte is a small town located right next door, which also gives its name to the river that runs through it. If we go upstream, and enter its lush rumba landscapes on the Mogotón hill, the highest point in Nicaragua at 2107 m, we arrive at the eye of the water... It is called that because of the abundant rains that are concentrated throughout the year. year and that provides a great wealth of rivers, waterfalls and lush forests. Thus, we are facing an ideal place for harvesting high quality coffee. To this we must add a family, the Herreras. Currently the farm is run by the third generation, with a total orientation towards the highest quality, respecting the environment.
PACAMARA: THE BEST OF EVERY HOUSE
With the previous cup of excellence we were able to discover in El Salvador, in the Apaneca-Ilamatepec mountain range, the “little miracle” of the Pacas family, who one day saw how a new bourbon truth spontaneously emerged, lower and with a foliage thicker than the rest, but above all, much more resistant and productive.
On the other hand, in a place in Brazil called Maragogipe, a municipality located in the northeast of Brazil, in 1870 they discovered a surprising variety due to the large size of its fruits (and large ones), but which suffered from low productivity and was not very resistant. to pests. However, it was a variety highly appreciated for its large size, to the point of being known as “elephant grain.”
The Salvadoran Institute for Coffee Research, in 1958, began working on hybridizations of the two varieties, Pacas and Maragogipe. It was not until 1992, 34 years later, when the new variety did not see the light of day with the creative name of Pacamara. Since then it has been a real nightmare for all those producers in El Salvador who did not work with it, since it is usually the winner of the main coffee competitions in the area, since it has everything: the quality of the bourbon variety, and the highest size of the market.
In this case, the Herrera family has opted for this winning horse and has achieved the rarity of growing it outside its territory of birth. Without a doubt, a coffee that cannot be missed.
