El Cauca - Inza, a Land of Coffee and Culture
The Department of Cauca is the heart of specialty coffee in Colombia. This region employs more than 93,000 families in coffee production and has the Denomination of Origin Café del Cauca, which guarantees its exceptional quality.
Cauca coffee is grown in small plots, mainly by indigenous communities, which reinforces its connection with tradition and artisanal care. Additionally, the region is home to impressive cultural heritage, such as the Tierradentro National Archaeological Park, a reminder of its rich history.
In this unique setting is Inza, the epicenter of Tabí coffee. From the “La Pendiente” farm, located at 1,900 meters above sea level, Sebastián Cuchumbe produces this exceptional coffee that stands out for its balance between tradition and technical excellence.
Tabí, the Jewel of Cenicafé
The Tabí varietal is born from a careful research process developed by the National Coffee Research Center (Cenicafé). This program, started in 1947, sought to improve existing varieties, making them more resistant to diseases such as rust and more productive, without compromising cup quality.
The name Tabí, which means "good" in the Guambian language, is a tribute to the indigenous communities that also contribute to the rich coffee tradition of Cauca. However, “good” hardly does justice to the excellence of this coffee. Its sensory profile makes it one of the most outstanding varietals of Arabica coffee in the world.
The Tabí combines the best of its predecessors, such as Bourbon, with greater resistance and a larger grain, providing an unmatched experience in each cup.
